Autumn salad with chestnuts and grape seed oil

Chestnuts are rich in fiber, good fats, minerals and vitamins. So just treat yourself to it.

Do you prefer boiled or roasted chestnuts? Whichever you prefer, you can use both in the salad. Here is the recipe:

Ingredients:

  • shelled chestnut (roasted or boiled)
  • Brussels sprouts
  • arugula
  • beer or other lettuce
  • 1/2 pomegranate
  • 1 orange
  • 2 tablespoons of grape seed oil
  • 2 tablespoons of fruit vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon of brown sugar
  • salt

Preparation:

Wash and cut the lettuce and arugula. Cut the Brussels sprouts in half and quickly fry them in grapeseed oil. Remove seeds from 1/2 pomegranate. Peel the orange and cut it into small pieces.

For the dressing, mix well the grape seed oil, vinegar, mustard, brown sugar and salt.

Place the lettuce, Brussels sprouts, chestnuts, pomegranate seeds and orange slices in a bowl and pour over the dressing.
