Brown bean and grape seed oil spread

Beans are a nutritious food that contains protein, dietary fiber, minerals and antioxidants.

So that it is not always just in a salad or stew, here is an interesting recipe for spread and beans. The inspiration for the recipe is a traditional dish from Malta called bigilla.

Ingredients:

  • 500 g of brown beans
  • 1 small garlic
  • 3 tablespoons of grape seed oil
  • juice of one lemon
  • fresh parsley
  • fresh mint
  • 1 teaspoon of red pepper
  • 1/2 teaspoon marjoram
  • 1/2 tsp salt
  • 1/2 tsp pepper

Preparation:

Soak the beans overnight in cold water. Drain the water and rinse the beans well. Boil the beans in a large amount of water for about 60 minutes. If we use an economy pot, it will be cooked much sooner. In any case, let's try to see if it's cooked.

Drain and cool the cooked beans and mash them. Add chopped garlic, grape seed oil, lemon juice, red pepper, marjoram, salt and pepper and mix well. At the end, add chopped parsley and mint and mix lightly.

If you are in a hurry, use canned beans :)
