Inspired by the Mediterranean, something different - pasta with artichokes. Artichokes also have many medicinal effects.
Do you know that artichokes are also grown in Slovenian Istria?
- 4 artichokes
- 1 lemon
- clove of garlic
- 5 tablespoons of grape seed oil
- 1 dl dry white wine
- 4 tablespoons of cooking cream
- white pepper
- 400 g pasta
- parmesan for sprinkling
Trim and peel the artichokes so that only the soft core remains and cut them into quarters. Then pour lemon juice and water over them. They must be completely covered so that they do not blacken. Drain them well before using them.
Fry chopped garlic in grape seed oil. When fragrant, add the artichokes. Mix, add salt and pepper to taste and cover with wine. Cover and simmer for 20 minutes.
During this time, cook the pasta.
After 20 minutes, when the artichokes have softened, add the cooking cream, mix and cook on low heat for 3 minutes.
Pour the sauce over the cooked pasta, mix and sprinkle with grated parmesan cheese.
To decorate, fry the artichokes in grape seed oil. First, bake at a high temperature until they brown, then reduce the temperature and simmer until they soften.
